Lazy Chicken & Rice

Every time I visit NYC, my bff takes me to the Halal cart on 53rd and 6th for their chicken and rice. I may be the first one to say it, but it is quite delicious.  I found this recipe on the internets for something similar, but it was modified to accommodate the available ingredients and my laziness.

Chicken Rice

For the chicken:

  • 2 tablespoons lemon juice
  • 1 tablespoon chopped fresh dried oregano
  • 1/2 teaspoon ground coriander
  • 3 garlic cloves, roughly chopped (about 1 1/2 tablespoons)  garlic powder
  • 1/4 cup light olive oil forgot to do this
  • Kosher salt and freshly ground black pepper
  • 2 pounds boneless, skinless chicken thighs, trimmed of excess fat (6 to 8 thighs) 2 chicken breasts from costco
  • 1 tablespoon vegetable or canola oil

You are supposed to marinate this, and then cook it and then chop it up and then cook it again. Clearly that wasn’t going to happen. So I cut up the raw chicken marinated over night and cooked it up in a pot.

For the rice:

  • 2 tablespoons unsalted butter
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon ground cumin
  • 1 1/2 cups long-grain or Basmati rice
  • 2 1/2 cups chicken broth
  • Kosher salt and freshly ground black pepper

Melt the butter in a cast iron skillet, then add the turmeric and cumin for 1 min. Fry the rice in this mixture for 4 mins. Add chicken stock and cook it till the stock is absorbed. I used Trader Joe’s stock. It is quite delicious.

For the sauce:

  • 1/2 cup mayonnaise
  • 1/2 cup Greek yogurt
  • 1 tablespoon sugar
  • 2 tablespoons white vinegar too lazy to look for the bottle
  • 1 teaspoon lemon juice
  • 1/4 cup chopped fresh parsley
  • Kosher salt and freshly ground black pepper

Mix all this together for yummy sauce.

I didn’t have lettuce or pita bread. So just served with some fresh veggies.
