Lazy Jerk Chicken with Peas & Rice

2013 09 Jerk Chicken (2)

This is the third time I’ve made Jerk Chicken in the slow cooker (using this recipe). While it is clearly a really simple recipe, by laziness standards, it has too many ingredients and steps. So, I have lazy-fied this recipe as follows:

Ingredients:

10 Chicken drum-sticks (or chicken in your favorite forms)
1/2 jar of Jerk seasoning paste (not seasoning/powder)

Method:

Step 1: Clean chicken and dump into slowcooker with 1/2 jar jerk seasoning.
Step 2: Cook for 5 hours on high in slowcooker.
Step 3: Broil in oven for 10 mins

I use this one, that I picked up from the locally owned grocery store.

Other recipes that I used were all from an awesome Youtube channel that I discovered recently: CaribbeanPot:

Jerk Chicken Dinner

My friends A+K made slow-cooker jerk chicken last week and posted mouth watering pictures on Facebook. So, I decided to make it this weekend.

Recipes:

  • Slow Cooker Jerk ChickenĀ
  • Jamaican Rice & Peas (minus the peas)
  • Collard greens (that I cooked in some garlic and jerk spice)
  • Dutty Fries (this is a dish we had at a Jamaican restaurant once that I tried to recreate: oven fried potato chips mixed in with a mixture of sugar and spices)
